Millet Upma with Vegetables

A light, savory millet breakfast tempered with mustard seeds, curry leaves, and ginger — excellent for Kapha mornings.

Ingredients

Method

  1. Toast the millet dry for 2 minutes; set aside.
  2. Pop mustard seeds in the oil, add ginger and vegetables, sauté 3 minutes.
  3. Add millet and hot water; simmer covered 15 minutes until fluffy.
  4. Season and finish with lemon.
Agni note. Millet's light, dry quality counters Kapha heaviness; Vata should add extra oil and eat it moist.

Substitutions

  • ghee for sunflower oilricher and more Vata-friendly (adds dairy)
