Sesame Wilted Greens

Ingredients
- 4 cups chopped kale or spinach
- 1 tbsp sesame oil
- 1 clove garlic, sliced
- 1 tsp toasted sesame seeds
- 1 tsp lemon juice
Method
- Warm the sesame oil and soften the garlic gently.
- Add greens with a splash of water; cover and wilt 3–4 minutes.
- Finish with lemon, salt, and sesame seeds.
Agni note. Cooking greens in oil tames their rough, cold, gas-forming rawness — the Ayurvedic answer to the raw-salad habit.
