Warming Spiced Mung Soup
A brothy whole-mung soup with ginger, black pepper, and greens — a light Kapha-clearing dinner.

Ingredients
- 3/4 cup whole green mung (soaked)
- 2 tsp fresh ginger
- 1/4 tsp black pepper
- 1 tsp cumin seeds
- 1 cup chopped spinach
- 4 cups water or light broth
Method
- Simmer soaked mung in water with ginger 30 minutes until tender.
- Dry-toast cumin, grind, and add with black pepper.
- Wilt in the spinach, season, and serve hot with lemon.
Agni note. An early, light, well-spiced dinner is the single most useful Kapha habit; this soup is built for it.
Substitutions
- red lentils for whole mung — faster cooking, slightly more heating
