Ingredients
- 5 thin slices fresh ginger, sliced
- 2 cups water
- 1 tsp lemon juice
- 1 tsp raw honey (optional, added warm not hot)
Method
- Simmer the ginger slices in water for 7–10 minutes.
- Take off the heat, add lemon juice.
- When just comfortably warm, stir in honey if using — honey is traditionally never cooked.
Agni note. Ginger is the classic 'universal digestive'; best before meals to wake up appetite.
Substitutions
- fennel tea for ginger — cooler choice when Pitta is high
