Simple Rice Congee (Peya)
Rice slow-simmered in extra water to a silky porridge — the traditional convalescent food when digestion needs maximum gentleness.

Ingredients
- 1/3 cup basmati rice
- 3 cups water
- 2 thin slices fresh ginger
- 1 pinch salt
Method
- Rinse the rice and simmer with water and ginger, partially covered, 35–40 minutes.
- Stir toward the end until silky; season lightly.
- Serve very warm, optionally with a few drops of ghee.
Agni note. Peya is the classical food for a weakened agni — nourishment with almost no digestive cost.
