Takra (Spiced Digestive Buttermilk)
Thin churned buttermilk with roasted cumin and ginger — the classical after-lunch digestive, far lighter than yogurt itself.

Ingredients
- 1/4 cup fresh yogurt
- 3/4 cup water
- 1/4 tsp roasted cumin powder
- 1 pinch dry ginger powder
- 1 pinch rock salt
- few curry leaves or cilantro
Method
- Whisk or blend yogurt and water vigorously until frothy; skim any butter solids.
- Stir in cumin, ginger, and rock salt.
- Drink at room temperature after the midday meal.
Agni note. Classical texts praise takra for weak digestion and heaviness after meals — diluted and churned, it behaves very differently from yogurt.
