Method

  1. Dry-toast cumin and fenugreek until fragrant; cool.
  2. Grind everything to a fine powder.
  3. Store airtight; sprinkle 1/4–1/2 tsp over cooked meals or bloom in ghee.
Agni note. A pinch bloomed in ghee at the start of cooking carries the spices through the whole dish.
