Light Kapha Kitchari
A lighter, spicier kitchari for Kapha: less grain, more dal and vegetables, minimal oil, and a black-pepper–ginger kick to cut heaviness.

Ingredients
- 1/3 cup basmati rice
- 2/3 cup split yellow mung dal
- 1 tsp ghee
- 1 cup chopped kale or cabbage
- 1 tsp cumin seeds
- 1/4 tsp black pepper
- 2 tsp fresh ginger
- 4 cups water
Method
- Rinse rice and dal. Dry-toast cumin in the pot, then add the teaspoon of ghee, ginger, and black pepper.
- Add rice, dal, and water; simmer 25 minutes.
- Stir in the greens for the last 5 minutes.
- Season with salt and a squeeze of lemon; serve hot.
Agni note. Black pepper and extra ginger stoke the sluggish Kapha agni; the higher dal-to-rice ratio keeps it light.
Substitutions
- omit ghee entirely for ghee — even lighter for strong Kapha
